It’s that time of year in Palm Springs when all the snowbirds fly back to their neck of the wood and the big music festivals are over. We the locals are left to enjoy the changing season in relative quiet. The traffic lights seem to change in seconds and a trip to Trader Joe’s in ‘Cat’ City is a cinch. They sell a good quality Israeli feta that I use for this appetizer, and I always have some in the fridge for the spur-of -the-moment occasions. We like to have friends over for a casual happy hour with refreshing cocktails and light ‘eats’ and watch the sun go down over the mountain.
Best Feta appetizer in seconds is always a hit with everyone. First time I had it was at our friend Richard Mendoza’s house and I loved it and have been making it ever since. I like to slice the block of feta length ways in half and use an excellent extra virgin olive oil and pour a generous drizzle over the top. Sometimes I add a little crushed garlic and a scattering of fresh oregano from our herb garden. Last night when I went out to cut some oregano for this recipe I was dumbfounded to find the bush gone. What the…? Apparently Francisco, the gardener, was a little overzealous with the hedge trimmer and decapitated the plant.

Best Feta Appetizer in seconds
What you need.
- 8oz Feta in water, drained and dried.
- Extra virgin olive oil for drizzling
- Sea salt and a few grinds of black pepper
- Fresh oregano, chopped or dried
- 1 clove of crushed garlic (optional)
- Put the feta on a serving plate
- drizzle with the olive oil
- season with salt and pepper
- add garlic if using
- scatter the oregano
